Since the early days of harvesting and produce, ancient Greeks considered olive trees and their seeds of divine origin, with innumerable beneficial qualities for the human something that denotes its utmost importance and value! During this themed week we will take part in the procedure of harvesting which has remained unchanged since then, honouring nature and its seeds in a most pure way.
The harvesting of the olive usually begins in November as soon as the fruit gradually turns from green into purple and dark.
The moment the olives are collected, they are transferred to a traditional local oil press (millstones-traditional way of harvesting oil), where the procedure of selection takes place.
After that, the fruit is crashed and its valuable juice pours out. At the final stage, the ‘liquid gold’ is separated from the water, offering us the coveted extra virgin olive oil.
The great secret in this extra virgin olive oil is our long commitment to it and the love of the family for the trees and the land! Together we will see this art unfolding and filling us with experiences, images and scents.
After the olive harvesting we will proceed to the citrus grove where we will pick oranges, lemons and tangerines for the week!
